A classic Filipino dish featuring tender chicken simmered in a savory-sweet sauce made of soy sauce, vinegar, and garlic, perfect for family gatherings.

Ingredients

  • 2 pounds chicken thighs and drumsticks (bone-in, skin-on)
  • ½ cup soy sauce
  • ½ cup white vinegar
  • 1 head garlic (cloves peeled and crushed)
  • 2 bay leaves
  • 1 tablespoon whole black peppercorns
  • 1 cup water
  • 2 tablespoons brown sugar
  • 2 tablespoons cooking oil for searing
  • Sliced red chilies (optional, for heat lovers)
  • Steamed white rice for serving
  • Fresh scallions, chopped for garnish

Instructions

  1. Combine soy sauce, vinegar, garlic, bay leaves, and peppercorns in a large pot.
  2. Add the chicken and pour water over it, stirring gently.
  3. Bring to a boil, then reduce heat to low and simmer for 30 minutes without stirring.
  4. After 30 minutes, uncover and increase heat to medium-high, cooking for an additional 10-15 minutes until sauce thickens and begins to caramelize.
  5. Sear chicken in a separate skillet over high heat for extra crispy skin, if desired.
  6. Taste the sauce and adjust seasoning with sugar or vinegar as preferred.
  7. Serve the chicken hot, garnished with scallions, over steamed rice.

Notes

For deeper flavor, marinate chicken in the sauce for a few hours or overnight. Adjust soy sauce and vinegar ratio to your taste.
