  • 2 boneless skinless chicken breasts (about 56 ounces each) or 4 thin sliced chicken breasts
  • 2 cups seasoned parmesan breadcrumbs (store-bought or homemade)
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil spray (non-aerosol) for that extra crispy finish
  • Shredded parmesan cheese for topping
  • Lemon for serving
  • Parsley for serving
  • Red pepper flakes for serving
  • Hot sauce for serving

Instructions

  1. Slice each chicken breast in half lengthwise to create thinner pieces. Pat them dry with a clean towel.
  2. Use a meat mallet to pound the chicken if necessary, ensuring even thickness for uniform cooking.
  3. Place the seasoned breadcrumbs in a shallow bowl. In another shallow bowl, crack the eggs and whisk them together with the kosher salt and ground black pepper.
  4. Dip each piece of chicken into the egg mixture, ensuring an even coating.
  5. Transfer the chicken to the breadcrumbs, pressing them into the meat to form an even coating.
  6. Preheat the air fryer to 390°F. Spray the air fryer basket with olive oil spray.
  7. Arrange the breaded chicken in the air fryer in a single layer. Spray each piece lightly with cooking spray.
  8. Cook the chicken for 6-7 minutes. Carefully flip each piece and spray the other side with more olive oil spray.
  9. Cook for an additional 4-5 minutes, until the internal temperature reaches 165°F.
  10. Once cooked, let the chicken rest for at least five minutes before slicing. Serve with a sprinkle of lemon and additional salt and pepper.

Notes

For added flavor, consider experimenting with different seasonings in your breadcrumb mix. Don’t rush the air frying process to achieve juicy chicken with a crisp outer shell.
