  • 2 chicken breasts
  • 8 oz pasta (your choice)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, sliced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Preheat the grill to medium-high heat. Season chicken breasts with salt and pepper, then grill for 6-8 minutes per side until cooked through. Let rest and slice.
  2. Cook pasta according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Sauté garlic until fragrant.
  4. Add cherry tomatoes and bell pepper; cook until softened, about 3-5 minutes.
  5. Toss in the cooked pasta, grilled chicken, lemon juice, and basil. Mix well and season with salt and pepper.
  6. Serve warm, topped with Parmesan cheese.

Notes

For extra flavor, marinate the chicken in olive oil, garlic, and lemon juice. Reserve some pasta cooking water to adjust sauce consistency if needed.
