A comforting and flavorful Whole30 Marry Me Chicken dish featuring tender chicken breast in a creamy coconut sauce with sun-dried tomatoes.

  • 2 tablespoons olive oil or avocado oil
  • 1.5 pounds boneless skinless chicken breast (cut into 1-inch cubes)
  • 2 teaspoons garlic salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh minced garlic
  • 1 13.66-ounce can full-fat unsweetened canned coconut cream (chilled; solid part only)
  • 1 cup chicken broth
  • 1/4 cup nutritional yeast
  • 1 teaspoon dried oregano
  • 12 tablespoons arrowroot or potato starch (as needed)
  • 1 8-ounce jar sun-dried tomatoes (drained, blotted dry, and chopped)
  • 0.5 ounces fresh basil (optional but recommended)

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the cubed chicken breasts and sprinkle with salt and pepper. Cook for about 5-7 minutes until golden brown and cooked through.
  3. In the last minute of cooking, add the minced garlic.
  4. In a mixing bowl, whisk together the chicken broth, nutritional yeast, dried oregano, and remaining salt.
  5. Add chopped sun-dried tomatoes to the skillet.
  6. Incorporate the white solid part of the chilled coconut cream and blend until melted.
  7. Pour in the chicken broth mixture and bring to a boil, then reduce heat and let simmer for about 5 minutes, stirring occasionally, until thickened.
  8. If the sauce is too thick, add more chicken broth; if too thin, combine starch with broth and whisk smooth.
  9. Adjust salt to taste and serve over cauliflower rice or with your favorite veggies.

Consider adding fresh herbs or additional spices for personalization. Ensure chicken is cubed uniformly for even cooking.
