A comforting and creamy white chili made with tender chicken, savory spices, and vibrant flavors, perfect for cozy evenings.

  • 1 lb chicken breast, cooked and shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add in the shredded chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper. Stir until well combined.
  3. Bring the mixture to a simmer and let it bubble gently for 20 minutes.
  4. Stir in sour cream and half of the cheese; allow to cook for another 5 minutes until heated through.
  5. Serve hot, topped with the remaining cheese.

Notes

Use rotisserie chicken for a quicker prep. Adjust cumin and chili powder to taste for desired spiciness.
