A warm and comforting bowl of white bean chili packed with flavor and heartiness, featuring shredded chicken and a blend of spices.

  • 1 lb chicken, cooked and shredded
  • 1 cup corn
  • 23 chiles (green or red, diced)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until softened, about 3-5 minutes.
  2. Add the diced chiles, shredded chicken, cooked white beans, and corn. Stir well to combine.
  3. Pour in the chicken broth and mix well. Season with cumin, chili powder, salt, and pepper.
  4. Bring the pot to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  5. Serve hot, garnished with your choice of toppings such as cilantro, avocado, or sour cream.
