A refreshing Waldorf Chicken Salad that combines shredded chicken with crisp apples, crunchy celery, and nuts, all tossed in a creamy dressing.

Ingredients

  • 3 cups shredded or chopped chicken breast (454g)
  • 1 large apple, diced (210g)
  • 8 celery stalks, chopped (208g)
  • 1/4 red onion, diced small (50g)
  • 1/4 cup fresh parsley, chopped (10g)
  • 1/4 cup toasted pecans, chopped (30g)
  • 3 tablespoons nonfat Greek yogurt or dairy-free sour cream/yogurt (45g)
  • 3 tablespoons lite mayo (45g)
  • 2 tablespoons clear balsamic vinegar or apple cider vinegar
  • 1 tablespoon fresh squeezed lemon juice (30g)
  • 1/2 teaspoon poppy seeds (optional)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine shredded chicken, diced apple, chopped celery, red onion, parsley, and toasted pecans.
  2. In a separate bowl, whisk together Greek yogurt, lite mayo, balsamic or apple cider vinegar, fresh lemon juice, salt, and black pepper until smooth.
  3. Pour the dressing over the salad mixture.
  4. Toss well until all ingredients are evenly coated with the dressing.
  5. Serve immediately or store in the fridge for later use.

Notes

To maintain the crunch of the apple, chop it just before serving. For a twist, consider adding nuts like walnuts or almonds.
