Delightful chicken enchiladas filled with shredded chicken, cheese, and enchilada sauce, perfect for busy weeknights.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour or corn tortillas
  • 1/2 cup diced onion
  • 1/2 cup sour cream (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine shredded chicken, half of the cheese, half of the enchilada sauce, and diced onion. Season with salt and pepper.
  3. Place a portion of the chicken mixture in the center of each tortilla, roll it up, and place seam side down in a greased baking dish.
  4. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  5. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly.
  6. Serve hot, optionally garnished with sour cream.

Notes

Experiment with cheese blends and consider adding diced jalapeños for an extra kick!
