Delicious chicken enchiladas made quickly with shredded chicken, cheese, and enchilada sauce, perfect for busy weeknights.

Ingredients

  • 2 cups cooked shredded chicken
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour tortillas
  • 1/2 cup diced onions (optional)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the shredded chicken, 1 cup of cheese, diced onions (if using), garlic powder, salt, and pepper.
  3. Pour a little enchilada sauce into the bottom of a baking dish.
  4. Take a tortilla, fill it with the chicken mixture, and roll it up. Place it seam-side down in the baking dish.
  5. Repeat with the remaining tortillas.
  6. Pour the rest of the enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
  7. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Garnish with fresh cilantro if desired and serve warm.

Notes

Feel free to customize your enchiladas with additional ingredients like jalapeños, black beans, corn, or bell peppers.
