A luxurious yet simple creamy garlic parmesan chicken pasta dish that captivates with its rich flavors and tender chicken.

Ingredients

  • 2 large boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 lb twisted pasta (such as fusilli, penne, or rotini)
  • 3 Tbsp unsalted butter, divided
  • 4–5 cloves fresh garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup grated Parmesan cheese (freshly grated preferred)
  • 1 tsp Italian seasoning, divided
  • ¼ tsp red pepper flakes (optional)
  • Fine salt and black pepper to taste
  • 2 Tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Cook pasta until al dente, reserving ½ cup of pasta water before draining.
  2. Pat the chicken dry. Season with salt, pepper, and ½ tsp of Italian seasoning. In a large skillet, melt 1 Tbsp of butter over medium-high heat and sear the chicken for 3–4 minutes per side until golden and cooked through. Transfer chicken to a plate, keeping any juices in the skillet.
  3. Lower the heat to medium. Add the remaining 2 Tbsp of butter to the skillet, then stir in minced garlic and red pepper flakes, cooking until fragrant.
  4. Pour in the chicken broth, scraping the browned bits from the skillet. Stir in heavy cream and remaining ½ tsp of Italian seasoning. Simmer gently for 2–3 minutes to thicken slightly.
  5. Reduce heat to low, gradually sprinkle in grated Parmesan, stirring until fully melted and the sauce is creamy.
  6. Return the chicken (with juices) to the skillet. Add drained pasta and toss until evenly coated. If sauce is too thick, add reserved pasta water until desired consistency is achieved.
  7. Taste and adjust salt and pepper as needed. Garnish with chopped parsley and serve immediately.

Notes

For a healthier twist, substitute half of the heavy cream with whole milk. Freshly grated Parmesan cheese is recommended for best results.
