A refreshing tzatziki chicken salad made with shredded rotisserie chicken, creamy tzatziki sauce, and crisp mixed greens, perfect for summer meals.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup Greek yogurt
  • 1/2 cucumber, diced
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Mixed greens for serving

Instructions

  1. In a bowl, combine Greek yogurt, diced cucumber, minced garlic, lemon juice, dill, salt, and pepper. Mix until smooth to create the tzatziki sauce.
  2. In another bowl, take the shredded chicken and pour the tzatziki sauce over it. Mix thoroughly until the chicken is fully coated.
  3. To serve, lay a bed of mixed greens on a plate. Spoon the chicken salad on top of the greens, ensuring an even distribution.

Notes

For creamier tzatziki, use full-fat Greek yogurt. Chill the sauce for at least 30 minutes before mixing with chicken.
