  • 2 cloves garlic, minced
  • 2 tablespoons (30 ml) olive oil
  • 1 tablespoon (15 ml) unsalted butter
  • 1 tablespoon (15 ml) fresh rosemary, chopped
  • 1 tablespoon (15 ml) fresh thyme, chopped
  • 1 tablespoon (15 ml) fresh lemon juice

Instructions

  1. Season the beef chops generously with salt and black pepper on both sides.
  2. In a small bowl, mix minced garlic, olive oil, rosemary, thyme, and lemon juice.
  3. Rub the garlic and herb mixture evenly over the seasoned beef chops.
  4. Place the beef chops in a vacuum-seal bag or a resealable plastic bag suitable for sous vide.
  5. Remove as much air as possible from the bag and seal it tightly.
  6. Fill a large pot or container with water and attach your sous vide precision cooker.
  7. Set the sous vide cooker to 135°F (57°C) for medium-rare doneness.
  8. Once the water reaches the desired temperature, submerge the sealed bag in the water bath.
  9. Cook the beef chops sous vide for 1.5 to 2 hours.
  10. Near the end of cooking, heat a skillet over medium-high heat.
  11. Add unsalted butter to the skillet and let it melt.
  12. Remove the beef chops from the bag and pat them dry with paper towels.
  13. Sear the beef chops in the hot skillet for 1-2 minutes per side, until browned.
  14. Transfer the seared beef chops to a plate and let them rest for a few minutes.
  15. Slice and serve the beef chops with your choice of sides.
