A flavorful and aromatic Thai grilled chicken marinated in a savory blend of soy sauce, ginger, and lime juice, perfect for summer cookouts.

  • 4 chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon chili sauce (optional)
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix together soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, and chili sauce.
  2. Place the chicken thighs in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade, allowing excess to drip off.
  5. Brush the grill grates with vegetable oil to prevent sticking.
  6. Grill the chicken thighs for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  7. Remove from the grill and let rest for a few minutes before serving.
  8. Garnish with fresh cilantro and enjoy!

Notes

For best results, marinate overnight. Adjust soy and lime to taste if chicken is too salty or not flavorful enough.
