A comforting dish of juicy chicken breasts smothered with sautéed mushrooms, onions, and melted cheese.

Ingredients

  • 4 boneless, skinless chicken breasts (about 6–8 oz each)
  • 2 tablespoons of olive oil (or butter)
  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 cup of sliced mushrooms
  • 1 small onion, thinly sliced
  • 1 cup of shredded mozzarella cheese (or Monterey Jack)
  • ½ cup of shredded cheddar cheese
  • 2 tablespoons of fresh parsley, chopped (for garnish)

Instructions

  1. Start by pounding the chicken breasts to an even thickness of about ½ inch. Pat them dry with paper towels.
  2. Mix the paprika, garlic powder, onion powder, salt, and black pepper in a small bowl. Rub this mixture evenly over both sides of the chicken.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for about 5–6 minutes on each side until golden brown and cooked through. Remove the chicken and keep warm.
  4. Add the remaining oil, sliced mushrooms, and onions to the same skillet. Sauté for 5–7 minutes until softened.
  5. Place the chicken back in the skillet. Top each piece with the sautéed mushrooms and onions, sprinkle with mozzarella and cheddar cheese, then cover with a lid. Cook on low for 2–3 minutes until the cheese melts.
  6. Garnish with fresh parsley before serving.

Notes

For variations, consider adding different vegetables to the sauté like spinach or bell peppers.
