  • 2 ripe pineapples
  • 1 cup cooked rice, either white or brown
  • 1 cup teriyaki sauce
  • 1 bell pepper, diced
  • 1 cup snap peas
  • 1 cup cooked chicken, diced (or tofu for a vegetarian option)
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions

  1. Cut the pineapples in half lengthwise and scoop out the insides, leaving a shell. Chop the pineapple flesh into small pieces and set aside.
  2. In a large skillet, heat the teriyaki sauce over medium heat.
  3. Add the diced chicken or tofu, bell pepper, snap peas, and chopped pineapple into the skillet.
  4. Stir-fry for about 5-7 minutes until the vegetables are tender and the chicken is heated through.
  5. In the pineapple bowls, layer the cooked rice and top with the teriyaki mixture.
  6. Garnish with sesame seeds and chopped green onions before serving.
