A delightful and visually stunning Teriyaki Chicken Avocado Rice Stack featuring savory marinated chicken, creamy avocado, and perfectly cooked sushi rice.

  • 2 cups sushi rice
  • 2 ½ cups water
  • ¼ cup rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 chicken breasts (diced)
  • ¼ cup soy sauce
  • 2 tbsp honey
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 1 avocado (sliced)
  • Sesame seeds
  • Fresh cilantro
  • Sriracha (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat and cover for about 18-20 minutes or until the rice is tender.
  3. In a small bowl, combine the rice vinegar, sugar, and salt. After cooking, gently mix this seasoning into the rice, allowing it to cool.
  4. Marinate the diced chicken breasts in soy sauce, honey, mirin, and sesame oil for at least 30 minutes.
  5. Cook the marinated chicken in a skillet over medium heat until it turns golden brown and caramelized, about 5-7 minutes.
  6. Assemble your Teriyaki Chicken Avocado Rice Stack. Layer cooked sushi rice, followed by avocado slices, and top it with the teriyaki chicken.
  7. Garnish with sesame seeds, fresh cilantro, and a drizzle of sriracha for heat if desired.
