A delicious twist on traditional potato salad featuring creamy mayonnaise, zesty jalapenos, and fresh herbs.

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 23 jalapenos, finely chopped
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Begin by boiling the potatoes in salted water until they become tender, about 15-20 minutes.
  2. After boiling, drain the potatoes and let them cool. Once cooled, cut them into cubes.
  3. In a large bowl, mix together the mayonnaise, sour cream, finely chopped jalapenos, diced red onion, chopped cilantro, lime juice, and a pinch of salt and pepper.
