  • 1 cup pineapple chunks (canned or fresh)
  • 1/2 cup teriyaki sauce
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon ginger (grated or minced)
  • 1 bell pepper (sliced, optional)
  • Sesame seeds (for garnish, optional)
  • Green onions (for garnish, optional)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Mix together the pineapple chunks, teriyaki sauce, brown sugar, soy sauce, garlic, and ginger in a bowl. Pour this mixture over the chicken.
  3. Add the bell pepper if using, for added flavor and texture.
  4. Cover the slow cooker and cook on low for 5-6 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Shred the chicken with two forks and stir it into the sauce. Serve the dish over rice or noodles.
  6. Garnish with sesame seeds and green onions if desired.

Notes
