A tropical delight combining juicy chicken with sweet pineapple and savory soy sauce, all cooked to perfection in a crockpot.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs (thighs recommended)
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup packed brown sugar
  • 3 cloves garlic, minced
  • 1/2 teaspoon ground ginger (optional)
  • 1 can (8 oz) pineapple chunks, drained
  • 1 red bell pepper, thinly sliced
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Cooked white rice or coconut rice, for serving
  • Green onions and sesame seeds for garnishing (optional)

Instructions

  1. Place the chicken in the slow cooker and set it aside.
  2. In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, and ground ginger, if using. Pour this mixture over the chicken.
  3. Add the pineapple chunks and sliced red bell pepper on top of the chicken.
  4. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
  5. Before serving, mix the cornstarch with cold water in a small bowl to create a slurry. Stir this mixture into the crockpot to thicken the sauce.
  6. Allow the sauce to cook for an additional 10 to 15 minutes, uncovered, until it reaches your desired consistency.
  7. Serve over white rice or coconut rice, and garnish with chopped green onions and sesame seeds, if desired.

Notes

For added flavor, consider searing the chicken before placing it in the slow cooker. Adjust seasoning to taste before serving.
