  • 2 pounds boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons ginger (fresh, grated or ground)
  • 2 cloves garlic (minced)
  • 1 tablespoon cornstarch (optional, for thickening)
  • Cooked rice or wraps (for serving)

Instructions

  1. Place the chicken breasts in the crockpot.
  2. In a separate bowl, mix together the pineapple chunks, soy sauce, brown sugar, ginger, and garlic.
  3. Pour the sauce over the chicken in the crockpot.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and tender.
  5. If desired, mix cornstarch with water and stir into the sauce to thicken before serving.
  6. Serve the chicken with rice or in wraps. Enjoy!
