  • 12 oz. skinless boneless chicken breast (or thigh, cut into small pieces)
  • Oil (for deep-frying)
  • 1 tablespoon oil
  • 2 cloves garlic (minced)
  • 4 tablespoons Thai sweet chili sauce (bottled)
  • 1 teaspoon lime juice
  • 1 pinch salt
  • 1/2 teaspoon white sesame
  • 1/2 tablespoon chopped cilantro leaves
  • 1 egg white
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 cup water (ice cold)
  • 1 tablespoon cooking oil
  • 1 pinch salt

Instructions

  1. Combine all batter ingredients in a mixing bowl and stir until smooth.
  2. Add chicken pieces and coat thoroughly with the batter.
  3. Heat oil in a wok or skillet over medium-high heat.
  4. Drop coated chicken pieces into the hot oil, frying until golden brown (about 5–7 minutes).
  5. Move cooked chicken to a plate lined with paper towels to drain excess oil.
  6. In a cleaned skillet, heat a tablespoon of oil over medium heat.
  7. Add minced garlic and stir until fragrant.
  8. Toss in the fried chicken, Thai sweet chili sauce, lime juice, and a pinch of salt, stirring to coat evenly.
  9. Garnish with white sesame seeds and chopped cilantro leaves before serving immediately.

Notes

For enhanced flavor, consider marinating the chicken with lime juice, salt, and garlic for at least 30 minutes.
