A delightful Sweet Chili Chicken Bowl featuring juicy chicken, vibrant vegetables, and a rich coconut lime drizzle that turns a simple meal into a culinary celebration.

  • 2 Chicken breasts
  • 1/4 cup Sweet chili sauce
  • 1 cup Jasmine rice
  • 1 Bell pepper, sliced
  • 2 Carrots, sliced
  • 1 Cucumber, sliced
  • 1/2 cup Coconut milk
  • 2 tbsp Lime juice
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Olive oil

Instructions

  1. Cook jasmine rice according to package instructions.
  2. In a skillet, heat olive oil over medium heat and cook the chicken breasts until browned and cooked through.
  3. Glaze the chicken with sweet chili sauce and cook until heated through, about 2-3 minutes.
  4. Slice the chicken and set aside.
  5. In the same skillet, stir fry the bell peppers, carrots, and cucumber until crisp-tender.
  6. For the drizzle, combine coconut milk and lime juice in a bowl, mixing well and seasoning with salt and pepper to taste.
  7. To serve, place jasmine rice in a bowl, top with chicken slices, stir-fried vegetables, and drizzle with coconut lime sauce.

Notes

For a spicier kick, add red pepper flakes to the sauce. Taste the coconut lime drizzle and adjust lime juice according to preference.
