Instructions

  1. In a bowl, mix soy sauce, vinegar, ketchup, brown sugar, and cornstarch to create the sauce.
  2. Heat vegetable oil in a pan over medium heat.
  3. Add diced chicken breast and cook until browned.
  4. Add onion and bell pepper, cooking until tender.
  5. Pour the sauce over the chicken and vegetables, adding the pineapple chunks.
  6. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens.
  7. Season with salt and pepper to taste.
  8. Serve over rice or noodles.
