A delightful combination of juicy chicken breasts paired with a sweet strawberry sauce, creating a unique and flavorful dish.

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • ½ teaspoon sea salt
  • ¼ cup strawberry jam
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon water (extra if needed)
  • ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
  • 2 tablespoons crumbled goat cheese (optional)
  • ¼ cup fresh strawberries (sliced, optional)

Instructions

  1. Heat olive oil in a medium skillet over medium-high heat.
  2. Season chicken breasts with a sprinkle of salt on both sides and place in the pan.
  3. Cook for about 4-5 minutes on one side until a nice golden crust forms.
  4. Flip and cook for another 4-5 minutes or until fully cooked through.
  5. Meanwhile, whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
  6. Pour the sauce mixture over the chicken when it’s just about finished cooking, nestling the chicken into it.
  7. Reduce heat and bring sauce to a simmer for 2-3 minutes until it thickens.
  8. Stir in most of the basil and simmer for another minute.
  9. Remove chicken from the pan and pour sauce over the top of each piece.
  10. Sprinkle with goat cheese if desired and garnish with remaining basil and sliced strawberries.

Notes

Be mindful of cooking times to ensure chicken is fully cooked. Consider adjusting the sweetness of the sauce with additional balsamic vinegar or strawberry jam as per your taste.
