  • 2 pounds chicken thighs
  • 1 cup teriyaki sauce
  • 1 cup fresh pineapple chunks
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. In a large bowl, mix together the teriyaki sauce, olive oil, garlic, and ginger. Season with salt and pepper.
  2. Add the chicken thighs to the marinade and let them soak for at least 30 minutes, or overnight for best flavor.
  3. Preheat the grill or a skillet over medium-high heat.
  4. Remove the chicken from the marinade and cook for about 5-7 minutes on each side, or until the chicken is cooked through.
  5. In the last few minutes of cooking, add the pineapple chunks to the grill or skillet to caramelize them slightly.
  6. Serve the chicken topped with the grilled pineapple, chopped green onions, and sesame seeds.

Notes

Use bone-in, skin-on chicken thighs for maximum flavor and moisture. Monitor the internal temperature; it should reach 165°F.
