Delicious sticky chicken thighs served over rice with vibrant broccoli and carrots, perfect for a weeknight dinner.

Ingredients

  • 4 chicken thighs
  • 1 cup rice
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the soy sauce, honey, sesame oil, garlic, and ginger to create the marinade.
  2. Add the chicken thighs to the marinade and let them soak for at least 30 minutes.
  3. Cook the rice according to package instructions.
  4. While the rice is cooking, heat a grill or skillet over medium-high heat.
  5. Cook the marinated chicken thighs for about 6-7 minutes on each side or until fully cooked.
  6. In a separate pan, steam or sauté the broccoli and carrots until they become tender.
  7. To serve, place a scoop of rice in a bowl, top it with sliced chicken, and arrange the vegetables around it.
