A delightful balance of sweetness from brown sugar and the tangy punch of pineapple, this spicy pineapple brown sugar chicken is perfect for any occasion.

  • 4 boneless, skinless chicken thighs (or breasts)
  • 1 cup fresh pineapple chunks
  • 1/2 cup brown sugar
  • 1 tablespoon soy sauce
  • 12 teaspoons crushed red pepper flakes (adjust to taste)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: green onions or cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine brown sugar, soy sauce, and crushed red pepper flakes. Stir until well mixed.
  3. Season the chicken with salt and pepper.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 4–5 minutes on each side until golden brown.
  5. Remove chicken from heat. Pour the brown sugar mixture over the chicken and add pineapple chunks on top.
  6. Transfer the skillet to the preheated oven and bake for 20–25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let rest for a few minutes. Serve hot.

Notes

For enhanced flavor, consider marinating the chicken in the brown sugar mixture for a few hours or overnight. Adjust the amount of crushed red pepper flakes to suit your spice tolerance.
