2 cups cooked shredded chicken
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup cream cheese
1/2 cup diced Hatch green chiles
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
Salt and pepper to taste
Corn tortillas
Oil for frying
Instructions
In a mixing bowl, combine the shredded chicken, cheese, cream cheese, diced Hatch green chiles, garlic powder, onion powder, cumin, salt, and pepper. Mix until fully combined.
Heat a skillet over medium heat and warm the corn tortillas for a few seconds on each side until pliable.
Place a spoonful of the chicken mixture onto each tortilla and roll it tightly.
In the same skillet, heat oil for frying. Fry the taquitos in batches until golden brown and crispy, about 2-3 minutes per side.
Remove from the oil and place on paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
