A vibrant and creamy Southern pea salad featuring sweet peas, hard-boiled eggs, and crumbled bacon, perfect for summer gatherings.

  • 1 (16-ounce) package of frozen sweet peas, thawed
  • 2 hard-boiled eggs, chopped
  • 4 to 6 slices of bacon, cooked until crisp and crumbled (or 1 cup cooked and chopped ham)
  • 1/2 cup chopped green onions (or regular onions)
  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon celery seeds (or 1/2 cup chopped celery)
  • A sprinkle of cayenne pepper
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream

Instructions

  1. In a large mixing bowl, combine the thawed sweet peas, chopped hard-boiled eggs, crumbled bacon or chopped ham, chopped green onions, and shredded cheddar cheese.
  2. Sprinkle in the black pepper, salt, garlic powder, and celery seeds (or chopped celery), plus a dash of cayenne pepper. Stir thoroughly to distribute the seasonings evenly.
  3. In another bowl, whisk together the mayonnaise and sour cream until smooth. Pour the dressing over the pea mixture and gently stir to coat.
  4. Cover the salad and refrigerate for at least an hour before serving to allow the flavors to blend together.

Notes

For extra heat, add more cayenne pepper. Consider using Greek yogurt in place of mayonnaise or sour cream for a healthier twist.
