  • 1 1/2 pounds (680 g) (680 grams) boneless, skinless chicken thighs
  • 2 tablespoon s (30 ml) olive oil
  • 3 tablespoon s (45 ml) tahini
  • 2 tablespoon s (30 ml) lemon juice
  • 1 teaspoon (5 ml) (5 grams) lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon (5 ml) (5 grams) ground cumin
  • 1 teaspoon (5 ml) (5 grams) ground coriander
  • 1 teaspoon (5 ml) (5 grams) paprika
  • 1 teaspoon (5 ml) (5 grams) salt
  • 1/2 teaspoon (3 ml) (2.5 grams) black pepper
  • 1 tablespoon (15 ml) (15 grams) chopped fresh parsley

Instructions

  1. Preheat the sous vide water bath to 165°F (74°C).
  2. In a bowl, combine olive oil, tahini, lemon juice, and lemon zest.
  3. Add minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to the bowl.
  4. Mix the marinade ingredients until well combined.
  5. Place the chicken thighs in a large resealable plastic bag.
  6. Pour the marinade over the chicken thighs in the bag.
  7. Seal the bag, removing as much air as possible.
  8. Massage the bag to ensure the chicken is evenly coated in the marinade.
  9. Place the sealed bag in the preheated sous vide water bath.
  10. Cook the chicken for 2 hours.
  11. Once cooked, remove the bag from the water bath.
  12. Carefully take the chicken thighs out of the bag and pat them dry with paper towels.
  13. Preheat a skillet over medium-high heat.
  14. Add a bit of olive oil to the skillet.
  15. Sear the chicken thighs in the skillet for 1-2 minutes per side until browned.
  16. Remove the chicken from the skillet and let it rest for a few minutes.
  17. Slice the chicken thighs, if desired.
  18. Garnish with chopped fresh parsley before serving.
