  • 4 lamb shanks (about 1 kg)
  • 2 tablespoons olive oil (30 ml)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup beef or vegetable broth (240 ml)
  • 1 tablespoon (15 ml) tomato paste
  • 1 teaspoon (5 ml) ground cumin
  • 1 teaspoon (5 ml) ground coriander
  • 1 teaspoon (5 ml) paprika
  • 1/2 teaspoon (3 ml) ground black pepper
  • 1 teaspoon (5 ml) salt
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf

Instructions

  1. Preheat the sous vide water bath to 165°F (74°C).
  2. Pat the lamb shanks dry with paper towels.
  3. Season the lamb shanks with salt and ground black pepper.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Sear the lamb shanks until browned on all sides, then remove from skillet.
  6. Add the chopped onion to the skillet and sauté until translucent.
  7. Stir in the minced garlic and cook until fragrant.
  8. Mix in the tomato paste, cumin, coriander, and paprika.
  9. Pour in the beef or vegetable broth, stirring to combine.
  10. Transfer the onion mixture into a large sous vide bag.
  11. Add the seared lamb shanks to the bag.
  12. Place the rosemary, thyme, and bay leaf into the bag.
  13. Seal the bag using a vacuum sealer or the water displacement method.
  14. Submerge the sealed bag in the preheated water bath.
  15. Cook the lamb shanks sous vide for 24 hours.
  16. After cooking, remove the bag from the water bath.
  17. Carefully open the bag and transfer the lamb shanks to a serving platter.
  18. Strain the cooking liquid into a saucepan and simmer to reduce.
  19. Serve the lamb shanks with the reduced sauce poured over them.
