Ingredients

  • 1 tbsp (15 ml) olive oil
  • salt
  • pepper
  • 4 cloves garlic
  • lemon zest
  • 1/4 cup (60 ml) honey
  • 2 tbsp (30 ml) dijon mustard
  • 1 tsp (5 ml) soy sauce
  • 1 tbsp (15 ml) melted butter

Instructions

  1. Set your Sous Vide device to a temperature of 130°F (54°C) and let it heat up for 45 minutes.
  2. Place the fillets into two separate small vacuum-sealable bags and seal them tightly.
  3. Pour olive oil over the fillets, then season with salt, pepper, minced garlic, and lemon zest.
  4. While waiting, mix honey, Dijon mustard, soy sauce, and melted butter in a small bowl and keep it aside.
  5. Once the time is up, take the bags out and open them. Use paper towels to dry the fillets.
  6. Generously coat the fillets with the prepared glaze, then use a kitchen torch or broiler to quickly caramelize the glaze until it bubbles.
