- 2 tbsp (30 ml) dijon mustard
- 1 tsp (5 ml) soy sauce
- 1 tbsp (15 ml) melted butter
- Set your Sous Vide device to a temperature of 130°F (54°C) and let it heat up for 45 minutes.
- Place the fillets into two separate small vacuum-sealable bags and seal them tightly.
- Pour olive oil over the fillets, then season with salt, pepper, minced garlic, and lemon zest.
- While waiting, mix honey, Dijon mustard, soy sauce, and melted butter in a small bowl and keep it aside.
- Once the time is up, take the bags out and open them. Use paper towels to dry the fillets.
- Generously coat the fillets with the prepared glaze, then use a kitchen torch or broiler to quickly caramelize the glaze until it bubbles.
