These sous vide ground beef lettuce wraps are juicy, packed with flavor, and perfect for low-carb meals. With a tangy sauce and crisp lettuce, they’re fresh, satisfying, and perfect for busy weeknights.

Ingredients

1 tablespoon avocado oil

1 onion, diced

1 red bell pepper, diced

2 lb lean ground beef (85% lean)

2 carrots, grated

1 (8 oz) can water chestnuts, roughly chopped

1/3 cup chopped cilantro

1/3 cup sliced green onions

2 teaspoons sesame seeds

2 heads butter, red, or green leaf lettuce

Sauce:

2 teaspoons minced ginger

1 tablespoon minced garlic

1/3 cup brown sugar or coconut sugar

1/2 cup reduced-sodium soy sauce or tamari

1 teaspoon sesame oil

2 tablespoons gochujang (or more to taste)

2 tablespoons mirin (or substitute dry sherry)

2 tablespoons lime juice

Instructions

1. In a medium bowl, whisk together all sauce ingredients. Set aside.

2. Heat avocado oil in a skillet over medium-high heat.

3. Add diced onion and red bell pepper. Sauté for 3–4 minutes until softened and slightly seared.

4. Add ground beef. Brown it, breaking into small pieces as it cooks.

5. Add half the sauce. Stir and cook for 2 more minutes.

6. Add grated carrots, water chestnuts, and remaining sauce. Cook another 2–3 minutes.

7. Remove from heat. Stir in cilantro and green onions.

8. Sprinkle with sesame seeds and serve in lettuce leaves.

9. Optionally, serve with rice, quinoa, or cauliflower rice.

10. To eat, spoon filling into lettuce, fold, and enjoy like a taco.

Notes

Use tamari instead of soy sauce to make it gluten-free.

Add more gochujang for a spicier kick or reduce it for a kid-friendly version.

Make the beef filling ahead of time for easy meal prep.

Lettuce leaves are best stored separately to stay crisp.
