Ingredients
– 1 pound (450 g) fresh green beans
– 1 tablespoon (15 ml) olive oil
– 2 garlic cloves, minced
– 2 tablespoons (30 ml) vegetable oil
– 1/3 cup (80 g) grated vegetarian cheese
– 2 tablespoons (30 ml) chopped walnuts
– 1 teaspoon (5 ml) salt
– 1/4 teaspoon (1.25 ml) black pepper
Instructions
Cut the ends off the green beans and wash them in a strainer.
Place the green beans, olive oil, and minced garlic into a vacuum-sealable pouch, spreading them out evenly. Seal the pouch using a vacuum sealing machine.
Adjust the sous vide equipment to a temperature of 186°F.
Immerse the sealed pouch in the sous vide device and let it cook for 60 to 90 minutes, with 90 minutes yielding softer beans.
Take the pouch out of the water and transfer the beans to a big bowl.
Mix the beans with salt, pepper, grated vegetarian cheese, and chopped walnuts. Serve while warm.
For advance preparation, after removing the pouch from the sous vide bath, submerge it in ice water for 10 minutes, then refrigerate or freeze until needed. Reheat in water set to 185°F before proceeding with serving instructions.
