  • 2 beef ribeye steaks
  • Salt
  • Black pepper
  • 2 cloves garlic
  • 1 tablespoon vegetable oil (15 ml)
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tablespoon unsalted butter (14 g)

Instructions

  1. Season the ribeye steaks generously with salt and black pepper on both sides.
  2. Mince the garlic cloves finely.
  3. Place each steak in a separate vacuum-seal bag.
  4. Add 1 tablespoon of olive oil and the minced garlic to each bag.
  5. Add 1 sprig of rosemary and 1 sprig of thyme to each bag.
  6. Seal the bags using a vacuum sealer to remove all air.
  7. Preheat your sous vide water bath to 130°F (54°C) for medium-rare doneness.
  8. Submerge the sealed bags in the water bath and cook for 1.5 to 2 hours.
  9. After cooking, remove the steaks from the bags and pat them dry with paper towels.
  10. Heat a skillet over high heat and add 1 tablespoon of unsalted butter.
  11. Sear each steak in the hot skillet for about 1 minute per side to develop a crust.
  12. Remove from heat and let the steaks rest for a few minutes before serving.
