2 beef ribeye steaks
Salt
Black pepper
2 cloves garlic
1 tablespoon vegetable oil (15 ml)
2 sprigs fresh rosemary
2 sprigs fresh thyme
1 tablespoon unsalted butter (14 g)
Instructions
Season the ribeye steaks generously with salt and black pepper on both sides.
Mince the garlic cloves finely.
Place each steak in a separate vacuum-seal bag.
Add 1 tablespoon of olive oil and the minced garlic to each bag.
Add 1 sprig of rosemary and 1 sprig of thyme to each bag.
Seal the bags using a vacuum sealer to remove all air.
Preheat your sous vide water bath to 130°F (54°C) for medium-rare doneness.
Submerge the sealed bags in the water bath and cook for 1.5 to 2 hours.
After cooking, remove the steaks from the bags and pat them dry with paper towels.
Heat a skillet over high heat and add 1 tablespoon of unsalted butter.
Sear each steak in the hot skillet for about 1 minute per side to develop a crust.
Remove from heat and let the steaks rest for a few minutes before serving.
