  • 6 large eggs
  • 5 cup (120 ml) cottage cheese
  • 2 tablespoon (30 ml) s heavy cream
  • 5 teaspoon (3 ml) salt
  • 6 (4-ounce) mason jars
  • 1 serving cooking spray

Instructions

  1. Pour water into a large pot and insert a sous vide immersion device into the water. Adjust the temperature to 170°F (77°C) based on the manufacturer’s guidelines.
  2. Blend the eggs, cottage cheese, heavy cream, and salt in a blender until the mixture is completely smooth, which should take about 15 to 20 seconds.
  3. Use cooking spray to coat the inside of the mason jars. Evenly distribute the egg mixture among the jars. Secure the lids until they are just snug, but avoid tightening them too much to prevent the jars from breaking in the hot water.
  4. Immerse the mason jars in the water bath and set a timer for 55 minutes. Once the time is up, take the jars out and place them on a cooling rack. If you plan to eat them right away, slide a knife around the edge and flip onto a plate, or enjoy straight from the jar. Allow any leftovers to cool before storing them in the refrigerator for up to one week.

Notes

  • For a richer consistency, use full-fat cottage cheese and heavy cream.
  • Experiment with various seasonings or herbs to personalize the flavor.
  • Leave adequate space at the top of each mason jar to accommodate the egg mixture expansion during cooking.
