3/4 cup (180 ml) beef chiles, roasted, peeled, seeded and diced (about 3 chiles)
2 green onions, sliced
8 large eggs, slightly beaten (about 2 cups (480 ml))
1/2 cup (120 g) cottage cheese
1 cup (120 g) sharp cheddar cheese, grated
3/4 teaspoon (4 ml) kosher salt
1/2 teaspoon (3 ml) black pepper
Instructions
Set your oven to a temperature of 300°F to preheat.
Combine the eggs, cheddar cheese, cottage cheese, salt, and pepper in a blender and blend until the mixture is smooth, which should take approximately 2 minutes.
Opt for a silicone muffin tray or lightly coat a regular muffin tray with oil. Place it inside a larger baking dish.
Scatter the roasted, peeled, seeded, and diced chiles along with the sliced green onions into the muffin tray.
Fill the muffin cups with the blended egg mixture until they are about three-quarters full. Carefully add boiling water to the larger baking dish, ensuring it reaches halfway up the sides of the muffin tray.
Place in the oven and bake the egg bites for roughly 25 minutes, until they are just barely firm, leaving the centers slightly soft.
Take the tray out of the oven, allowing the egg bites to rest in the water bath for about 5 minutes. They will continue to cook during this time.
Enjoy them warm.
Store in the refrigerator for up to three days, or allow to cool to room temperature and then freeze in zip-lock bags for up to a month.
To warm them up, wrap each one in a paper towel and microwave on high for 30 seconds per egg bite.
This recipe yields approximately 12 egg bites.
