6 large eggs
1/2 cup (120 ml) Gruyere cheese measured grated
1/4 cup (60 ml) cream cheese softened
1/2 teaspoon (3 ml) salt
1/4 teaspoon (1 ml) pepper
1/4 cup (60 ml) Gruyere cheese
4 slices beef bacon
1/4 cup (60 ml) baby spinach loosely packed
1/4 cup (60 ml) mushrooms sliced
1 tablespoon (15 ml) garlic minced
2 large egg whites
2 tablespoon (30 ml) s roasted red peppers
Instructions
Heat the sous vide cooker to 77°C (170°F) to prepare the water bath.
Blend together the eggs, grated cheese, softened cream cheese, salt, and pepper until you achieve a smooth consistency.
Fry the beef bacon in a pan until it becomes crispy, then crumble and set it aside.
Arrange the jars on your workspace. In two jars, place the crumbled bacon on the bottom and sprinkle with grated Gruyere. In another two jars, layer the spinach and mushroom mixture at the bottom. In the last two jars, put an egg white in each followed by the roasted red peppers.
Pour the blended egg mixture evenly into all six jars.
Secure the lids on the jars and immerse them in the prepared water bath, setting a timer for 40 minutes.
Once done, take the jars out of the water bath and use a butter knife to carefully release the egg bites from the jars.
