  • 1 boneless ribeye or NY strip steak (1–1.5 inches thick)
  • Salt and pepper, to taste
  • 2 garlic cloves, crushed
  • 2 sprigs rosemary or thyme
  • 1 tbsp (15 ml) vegetable oil
  • 1 BPA-free vacuum bag or zipper-lock freezer bag

Instructions

  1. Sprinkle the beef with salt, pepper, crushed garlic, and your choice of rosemary or thyme.
  2. Secure the meat in a BPA-free vacuum bag or zip-lock freezer bag, ensuring a tight seal using the water displacement technique.
  3. Position the bag on the top rack of your dishwasher, making sure it’s not near any detergent compartments.
  4. Initiate a complete sanitize or heavy-duty wash cycle, lasting between 90 to 120 minutes.
  5. Once the cycle concludes, take the steak out of the bag and blot it dry using paper towels.
  6. Heat a pan until it is extremely hot. Pour in vegetable oil and quickly brown the steak for 30 seconds on each side.
  7. Allow the steak to rest for five minutes. Cut into slices and serve with your preferred sauce or compound butter.
