1 teaspoon (5 ml) salt (5 grams)
1/2 teaspoon (3 ml) black pepper (1 gram)
1 tablespoon (15 ml) olive oil (15 milliliters)
1 cup (240 ml) heavy cream (240 milliliters)
1 cup (240 ml) grated Parmesan cheese (90 grams)
2 cloves garlic, minced
8 ounces (227 g) fettuccine pasta (225 grams)
2 tablespoons (30 ml) unsalted butter (28 grams)
1/4 cup (60 ml) chopped fresh parsley (15 grams)
1/4 teaspoon (1 ml) nutmeg (0.5 grams)
Water for sous vide and pasta cooking
Instructions
Preheat the sous vide machine to 140°F (60°C).
Season chicken breasts with salt and black pepper.
Place chicken in a vacuum-sealable bag with olive oil.
Seal the bag using a vacuum sealer.
Submerge the sealed bag in the sous vide water bath.
Cook chicken sous vide for 1.5 hours.
Bring a pot of water to a boil for the pasta.
Cook fettuccine according to package instructions.
