  • 1 tablespoon (15 ml) olive oil (15 milliliters)
  • 1 cup (240 ml) heavy cream (240 milliliters)
  • 1 cup (240 ml) grated Parmesan cheese (90 grams)
  • 2 cloves garlic, minced
  • 8 ounces (227 g) fettuccine pasta (225 grams)
  • 2 tablespoons (30 ml) unsalted butter (28 grams)
  • 1/4 cup (60 ml) chopped fresh parsley (15 grams)
  • 1/4 teaspoon (1 ml) nutmeg (0.5 grams)
  • Water for sous vide and pasta cooking

Instructions

  1. Preheat the sous vide machine to 140°F (60°C).
  2. Season chicken breasts with salt and black pepper.
  3. Place chicken in a vacuum-sealable bag with olive oil.
  4. Seal the bag using a vacuum sealer.
  5. Submerge the sealed bag in the sous vide water bath.
  6. Cook chicken sous vide for 1.5 hours.
  7. Bring a pot of water to a boil for the pasta.
  8. Cook fettuccine according to package instructions.
  9. Drain pasta and set aside.
  10. Remove chicken from sous vide and pat dry.
  11. In a skillet, melt butter over medium heat.
  12. Add minced garlic and sauté until fragrant.
  13. Stir in heavy cream and bring to a gentle simmer.
  14. Add Parmesan cheese, stirring until melted and smooth.
  15. Season sauce with nutmeg and additional salt to taste.
  16. Slice cooked chicken into thin strips.
  17. Add cooked pasta to the Alfredo sauce, tossing to coat.
  18. Mix in sliced chicken and chopped parsley.
  19. Serve warm, garnished with extra Parmesan if desired.
