  • 2 pounds (900g) boneless skinless chicken breasts
  • Salt and freshly ground black pepper
  • 1/2 cup (120ml) mayonnaise
  • 1/2 cup (120ml) whipped cream cheese
  • 3 tablespoons (45ml) freshly squeezed lemon juice
  • 1 cup (150g) seedless red grapes, quartered
  • 1/2 cup (65g) chopped walnuts, toasted
  • 1/4 cup (40g) sliced scallions
  • 1/4 cup (40g) diced celery

Instructions

  1. Step 1 Adjust the Anova Sous Vide Precision Cooker to a temperature of 145°F (62°C).
  2. Step 2 Sprinkle salt and pepper over the chicken, then place it into a large resealable or vacuum-sealable bag. Seal the bag by using the water immersion method or a vacuum sealer on the dry setting. Submerge in the water bath and set the timer for 60 minutes.

  4. Step 0 Once the timer sounds, take the bag out of the water bath and place it in an ice bath. Let it cool for at least 20 minutes.
  5. Step 1 In the meantime, blend the mayonnaise, cream cheese, and lemon juice in a big bowl. Mix in the grapes, walnuts, scallions, and celery.
  6. Step 2 After the chicken has cooled down, take it out of the bag. Slice it into 1/2-inch pieces and mix it into the mayonnaise blend. Stir everything together. Adjust the seasoning with salt and pepper as needed. Serve.
