24 oz (680 g) chicken breast, four 6 oz (170 g) boneless skinless breasts, lightly pounded
8 oz (227 g) beef or turkey bacon, shredded
12 oz (340 g) tomato sauce, your favorite brand or homemade
2 teaspoon (10 ml) parsley, finely chopped
1 cup (240 ml) all-purpose flour, seasoned with sea salt and black pepper
2 cups (480 ml) bread crumbs, Italian seasoned or your choice
2 large eggs
2 oz (60 ml) apple juice or orange juice (mixed with egg to make egg wash)

Instructions
Place the chicken breasts on a chopping board covered with plastic wrap. Cover them with another piece of plastic and gently flatten them with a meat mallet.
Prepare a station for coating with seasoned flour, egg wash, and Italian-seasoned bread crumbs.
First, coat the chicken in the seasoned flour, then dip them in the egg wash, and finally cover them with bread crumbs. Ensure each piece is thoroughly coated.
Preheat a large saute pan over high heat and pour in about half an inch of vegetable oil. Carefully place the coated chicken pieces into the oil using tongs, ensuring not to overcrowd the pan. Cook until they achieve a golden-brown color on one side, then flip them with tongs to brown the other side.
After frying, let the chicken drain on racks placed over baking sheets.
Arrange the fried chicken pieces in a baking dish. Spoon approximately â…“ cup of tomato sauce over each piece.
Sprinkle two ounces of shredded beef or turkey bacon on top of the sauce.
Finish with a sprinkle of chopped parsley over the bacon.
Bake in a preheated oven at 350°F for 20 minutes or until the cheese is fully melted. Ensure the chicken reaches an internal temperature of at least 165°F.
Take them out of the oven and serve right away with your choice of pasta.
