Ingredients

  • Cream cheese, 16 oz (454 g)
  • Granulated sugar, 1 cup (200 g)
  • Vanilla extract, 2 teaspoons (10 ml)
  • Large eggs, 3
  • Sour cream, 1 cup (240 ml)
  • All-purpose flour, 2 tablespoons (15 g)
  • Caramel sauce, 1/2 cup (120 ml)
  • Graham cracker crumbs, 1 1/2 cups (150 g)
  • Unsalted butter, melted, 1/4 cup (60 ml)
  • Brown sugar, 2 tablespoons (25 g)
  • Salt, a pinch

Instructions

  1. Preheat a water bath to 176°F (80°C) for sous vide cooking.
  2. In a bowl, mix graham cracker crumbs, melted butter, brown sugar, and salt until combined.
  3. Press the crumb mixture evenly into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth and creamy.
  5. Gradually add granulated sugar to the cream cheese, mixing until well combined.
  6. Mix in the vanilla extract and eggs, one at a time, until fully incorporated.
  7. Add sour cream and all-purpose flour to the mixture and blend until smooth.
  8. Pour the cream cheese filling over the prepared crust in the springform pan.
  9. Wrap the springform pan tightly with plastic wrap to prevent water from entering.
  10. Submerge the wrapped pan in the preheated water bath.
  11. Cook the cheesecake in the water bath for 90 minutes.
  12. Carefully remove the cheesecake from the water bath and unwrap.
  13. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours.
  14. Once chilled, remove the cheesecake from the pan.
  15. Drizzle caramel sauce over the top of the cheesecake before serving.
