2 lb (907 g) s ground beef
2 tbsp (30 ml) Montreal steak seasoning
1 tbsp (15 ml) olive oil
12 small slices cheddar cheese
12 Hawaiian rolls
Instructions
Mix the ground beef with the steak seasoning thoroughly.
Shape the mixture into 12 small patties.
Arrange the patties on a baking sheet lined with foil and freeze them for one hour.
Take the patties out of the freezer and divide them into three plastic zipper bags, placing four patties in each.
Without a vacuum sealer, use the “water displacement method” by submerging the bag with sliders almost completely underwater, leaving about an inch open at the top; the water pressure will push out the air, allowing you to seal the bag completely.
Immerse the sealed bags in a sous vide machine set to 130°F for medium-rare to medium, or to 138°F for medium to medium-well, and cook for 45 minutes to 3 hours.
Carefully remove the patties from the sous vide and plastic bags, then rest them on a cutting board covered with paper towels for 10-15 minutes.
Just before eating, heat olive oil in a cast iron skillet over high heat.
Quickly brown the patties for 20-30 seconds on each side.
You can also grill them over high heat for the same duration on each side.
Place a slice of cheddar cheese on each patty and serve them on Hawaiian rolls.
Notes
Consider marinating the ground beef with steak seasoning for 30 minutes before shaping into patties for enhanced flavor.
Opt for sharp cheddar slices for a bolder cheese taste in your sliders.
Achieve a perfect melt by covering the skillet with a lid while browning the patties with cheese on top.
