Creamy and zesty sour cream chicken enchiladas that are a comforting weeknight favorite.

Ingredients

  • 2 cups shredded chicken
  • 1 cup sour cream
  • 1 cup salsa verde
  • 2 cups shredded cheese (Monterey Jack or Cheddar)
  • 8 small flour tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, sour cream, garlic powder, onion powder, salt, and pepper.
  3. Lightly coat a baking dish with some salsa verde.
  4. Take a tortilla and fill it with the chicken mixture and a sprinkle of cheese. Roll it up and place it seam-side down in the baking dish.
  5. Repeat with the remaining tortillas.
  6. Pour the remaining salsa verde over the top of the enchiladas and sprinkle with the remaining cheese.
  7. Bake for 20-25 minutes until the cheese is bubbly and golden.
  8. Garnish with chopped cilantro if desired, and serve hot.

Notes

For added depth, try varying the spices or different cheeses. Leftover filling can be used for salads or wraps.
