A sweet and tangy slow cooker dish combining chicken, pineapple, and BBQ sauce for a delicious family meal.

Ingredients

  • 1 pound chicken breasts or tenders
  • 10 oz frozen pineapple
  • 1/2 red onion, chopped
  • 2 bell peppers, chopped (any color)
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 cup BBQ sauce (1/2 cup for cooking + 1/4 cup later)
  • Optional garnish: green onions or cilantro

Instructions

  1. Cut the chicken, peppers, and onions into bite-sized chunks and add to the slow cooker.
  2. Add the frozen pineapple chunks to the cooker, breaking up any large pieces.
  3. Season with salt and pepper, and drizzle in 1/2 cup of BBQ sauce.
  4. Cook on low for 6–7 hours or high for 3–4 hours until the chicken is fully cooked.
  5. Drain the juices and add another 1/4 cup of BBQ sauce, mixing gently.
  6. Garnish with green onions or cilantro if desired.

Notes

For added texture, consider tossing in cashews or peanuts before serving. You can prep ingredients the night before and store them in the refrigerator.
