Slow Cooker Parmesan Garlic Chicken and Potatoes

A comforting dish that combines tender chicken and hearty potatoes in a creamy Parmesan garlic sauce, made effortlessly in a slow cooker.

  • 2 pounds potatoes, cut into 1½2 inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground black pepper
  • ½ teaspoon paprika
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce
  • ½ cup water or chicken stock
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Combine potatoes, olive oil, ¾ teaspoon salt, ½ teaspoon black pepper, and paprika in the bottom of a slow cooker. Stir until well coated.
  2. Place chicken pieces on top, sprinkle with the remaining salt and pepper.
  3. In a bowl, whisk together Parmesan garlic sauce and water until well incorporated.
  4. Pour the sauce mixture over the chicken and potatoes.
  5. Cook on High for 4 hours or on Low for 6 hours, or until chicken is cooked through and potatoes are tender.
  6. During the last 20 minutes of cooking, add mozzarella and Parmesan cheese. Continue to cook, covered.
  7. Before serving, sprinkle with chopped parsley.

Notes

For extra flavor, consider searing the chicken before adding it to the slow cooker. Adjust cooking times based on your model for best results.
