  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. In the slow cooker, combine the chicken breasts, rice, chicken broth, lemon juice and zest, garlic, onion, thyme, rosemary, salt, and pepper.
  2. Mix well to ensure the chicken and rice are evenly coated.
  3. Cover and cook on low for 240-360 minutes or until the chicken is cooked through and the rice is tender.
  4. Once done, shred the chicken with two forks and stir back into the rice.
  5. Serve warm, garnished with fresh parsley.
