A melt-in-your-mouth Slow Cooker Greek Chicken recipe featuring tender chicken thighs cooked with zesty lemon and fresh herbs, perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 medium sweet or yellow onion, thinly sliced
  • ½ cup chicken broth
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • Cooked rice, quinoa, or pita for serving
  • Fresh dill for garnish
  • Cherry tomatoes for serving
  • Sliced cucumbers for serving
  • Kalamata olives for serving
  • Tzatziki sauce for serving
  • Lemon wedges for garnish

Instructions

  1. Place the chicken thighs in the bottom of the slow cooker.
  2. Top with sliced onions.
  3. In a small bowl, whisk together chicken broth, lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
  4. Pour the mixture evenly over the chicken and onions.
  5. Cover and cook on LOW for 300–360 minutes or HIGH for 180–240 minutes until the chicken is tender and reaches an internal temperature of 165°F.
  6. Shred the chicken directly in the slow cooker or remove and slice it, then stir to combine with juices.
  7. Serve over rice, in pitas, or alongside fresh veggies and tzatziki.
  8. Garnish with dill and lemon wedges if desired. Enjoy!
