  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 sweet potatoes, diced
  • 2 cups Brussels sprouts, halved

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together honey, Dijon mustard, olive oil, garlic powder, salt, and pepper in a small bowl.
  3. Place chicken, sweet potatoes, and Brussels sprouts on a sheet pan.
  4. Drizzle the honey Dijon mixture over everything and toss to coat.
  5. Spread the ingredients out evenly on the pan.
  6. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
